I always like to give a little background on any recipe that I share with my readers, so here it goes… This recipe is from my friend Tammy Wilkinson. I met Tammy in Wal-Mart about two years ago. She is a Hurricane Katina transplant, just like I was. We have shared so many memories together, and recipes too. I fondly call her the “cake lady.” She has many other culinary talents that she is willing to share with you.

4-7-2013 2-35-50 PMI came up with this version of fruit salsa a few weeks back. After checking the Internet, I was positive that such a dish did exist! Their were several types, all yummy looking. The difference between the others and mine is that I bathed this version in a sour cream dressing. I also used Splenda to sweeten the sour cream. Thus cutting back on a few calories:)

Then, I set out to find the perfect chip for dipping. I found such a thing with the Simply Naked pita chips… Try it out on your family and friends! I am sure they will enjoy it as much as mine did.

Shelley UnderhillSeveral weeks back I had the honor of attending my daughter’s bridal shower hosted by her wonderful in-laws to be. Not only was the company great, but so was the food! The dish that stood out the most was the bacon and cheddar dip. It was so delicious that I swung by “the Pig” on my way back from Elkmont to grab the ingredients I needed to prepare some dip of my own. You talk about easy to prepare…all you do is open the packages and mix it up! I did, however, change up the recipe just a little, as you will see when you read the recipe on the back of the packet.

A big thank you goes out to Mrs.Kerry Willard for bringing the dip and sharing with us how to prepare it. When I shared it with my family, there were no complaints and nothing left! They ate it all!

Shelley UnderhillSeveral weeks back I was asked to make a covered dish for a meeting at church. My reply was, “What would you like me to make?” The response was one I was not expecting. “ Just make a corn casserole,” she said.

My brain started searching for a recipe. All at once I remembered that years ago I had made one such thing!

Shelley UnderhillWith all this nice weather we have had this winter, the fresh fruit is everywhere! I personally love a good cold cup of fresh fruit with a dollop of sweetened sour cream on top.

I threw this version together last week after hitting the jackpot in the fruit section at Publix. What I like most about it is that it stays firm and tasty for several days (if it lasts that long!)

You can buy turnips just about anywhere, in any shape and any size. I personally prefer the baseball size ones. If you have never tried them, then you are in for a treat.

Some people call them mock potatoes! I will agree with them! They are quite tasty and very easy to prepare.

Because it’s the beginning of the new year and everyone at my house has set some kind of goal to lose weight or to eat better in 2013, I came up with this recipe that I hope you will try. I enjoyed them so much that I fixed them again several days later.
