Mexican Re-Fried Bean Dip

Anything from Duncan Hines to Betty Crocker, she’s made friends with them all. You may think I’m joking, but several times I thought to myself, “She’s got a cupcake factory going on in my kitchen!” The best part about all the excitement is, she cleans up her mess, and always lets me taste the final product. Ahhh…

9-7-2013 9-18-18 AMTalk about a treat! My mother came up with this version of stir fry cabbage. Not for the cholesterol conscious by any means. This version of stir fry cabbage will knock your socks off!

Named Mardi Gras Cabbage after its bright purple, green and gold colors, it is oh so appealing to the eye. I challenge you to fix it and see how well it’s liked. I enjoyed my portion of cabbage with a slice of pork lion that I prepared in the oven. Good stuff…

Sweet and savory, this cobbler will have them coming back for more, and leave you with an easy clean up. I am blessed to have access to a huge blackberry patch. It’s that times of year again–time to break out the salsa recipes for all of those tomatoes from the garden. And if you don’t have a garden or a tomato plant planted here or there, keep a close eye on the markets, because they should be plentiful soon.

Fresh salsa is always better with home grown or locally bought produce. I served this version very cold with tortilla chips.
